White Chocolate, Strawberries & Rhubarb

A celebration of Montana fruit and handcrafted chocolate, this bar captures the timeless pairing of strawberries and rhubarb in an entirely new way.

We make creamy white chocolate with organic strawberries and rhubarb grown by Fat Robin Orchard. Before freeze-drying, the rhubarb is gently dipped in a house-made lime and ginger simple syrup, adding a delicate hint of citrus and spice that brightens its naturally tart character without overpowering it. The bars are finished with sliced freeze dried strawberries.

The result is a beautifully balanced chocolate with layers of flavor. The first bite is rich and velvety, followed by the lively tang of rhubarb, while the strawberries emerge on the finish with their soft, natural sweetness. It's reminiscent of a classic strawberry-rhubarb dessert, yet lighter, brighter, and unmistakably fresh.
